Healthy, Easy, and Tasty Meals for the Busy Momma

I am not one of those women who love to cook. If I lived by myself, I’d most likely survive off of cereal, ramen, and instant meals. Cooking is something that I do purely out of love for my family. It’s also something that I’ve grown into over the years, not really having a clue when I first got married. (My husband still shudders when he remembers the apple, banana curry recipe I once tried.)

These days especially, I’m always looking for easy, budget friendly, and healthier meals. It’s an added plus if I can get my daughter (an extremely picky eater) to eat it. Thank goodness for Pinterest and the wellspring of recipes available there! Hoping to share the wealth, I’ve included below some of my favorite recipes that will hopefully make your task in the kitchen a bit easier.

1. Creamy Chicken Tortilla Soup

This is one of my family’s absolute favorites. It’s easy to make and makes enough for me to freeze half and still have leftovers after serving my family of four. The prep is minimal and it tastes just as good after being frozen as it did freshly made.

2. Baked Pesto Chicken

If you like pesto and mozerella, this is a great main dish. Prep is minimal, few ingredients, and then you bake for roughly 35 minutes. The result is a flavorful chicken dish that goes great with a salad, or sides of veggies.

3. Crock Pot Chicken Noodle Soup

Chicken noodle soup is the classic comfort food when your feeling sick and this crockpot recipe makes it easy to happen amidst a busy day. Because the egg noodles tend to flavor the soup with an eggy taste when cooked in the crockpot I’ve modified the recipe slightly by cooking them separately in a pot and then adding. This also prevents the noodles from becoming overly soft. This soup also freezes well.

4. Kale Pasta Salad

I have made this recipe for countless parties and family gatherings and am almost always asked for the recipe. Though the instructions say to cook it chilled, my family perfers it warm. We often modify it by using gluten free pasta as well and add extra Balsamic vinegar.

5.Greek Lemon Soup

This isn’t quite as easy as others, but the combination of lemon an spice is so delicious and soothing, especially when you have a cold or sore throat. I highly recommend this one if you like Greek food.

6. Easy Orange Chicken

This was a recent discovery and I love it because it has few ingredients and is easy to make. The finished product is flavorful and I serve with rice and cream cheese rangoons or vegetable spring rolls from the frozen section (or you could be ambitious and make them yourself). It was a win with the entire family and I’ve actually added it again to this week’s meal plan.

7. Quinoa Wrap with black beans, feta, and avacado

Trying to incorporate more meatless meals into my weekly menu, I stumbled upon this treasure. What I like about this recipe is that it is light and healthy and can also be thrown together after a busy day. For the tots, I typically just make a bowl of the quinoa, black bean, feta and avocado mixture while we adults enjoy our wraps.
